Ingredients

- 1 lb ground beef
- 2 tbsp jerk seasoning
- 1/4 cup breadcrumbs
- 1 egg
- 1 can (14 oz) coconut milk
- 1 tbsp curry powder
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp vegetable oil
- Salt to taste
Instructions
- Preheat oven to 400°F.
- In a bowl, mix ground beef, jerk seasoning, breadcrumbs, and egg.
- Form the mixture into meatballs.
- Place meatballs on a baking sheet and bake for 20 minutes.
- In a pan, heat oil over medium heat and sauté onion and garlic until soft.
- Add coconut milk and curry powder; stir well.
- Once meatballs are cooked, add them to the sauce.
- Simmer for 10 minutes.
- Serve hot with rice.
Notes
- Adjust the spice level by using more or less jerk seasoning.
- Serve with cilantro for added flavor.
- Store leftovers in the fridge for up to 3 days.
