Description

A fresh and healthy salad inspired by Jennifer Aniston’s favorite recipe.


Ingredients

  • 1 cup quinoa
  • 1 cup chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions.
  2. In a large bowl, combine cooked quinoa, chickpeas, cucumber, bell pepper, red onion, and parsley.
  3. Add feta cheese, olive oil, lemon juice, salt, and pepper to the bowl.
  4. Toss the salad gently to mix all ingredients.
  5. Chill in the refrigerator for at least 30 minutes before serving.
