A fresh and healthy salad inspired by Jennifer Aniston’s favorite recipe.
Ingredients

- 1 cup quinoa
- 1 cup chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, chickpeas, cucumber, bell pepper, red onion, and parsley.
- Add feta cheese, olive oil, lemon juice, salt, and pepper to the bowl.
- Toss the salad gently to mix all ingredients.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables or proteins as desired.
- This salad can be stored in the fridge for up to three days.
