- 2 jalapenos, diced (adjust based on spice preference)
- 1/4 cup lime juice (freshly squeezed, about 2–3 limes)
- 3 cloves garlic, minced
- 1 medium onion, diced
- 4 cups chicken broth (about 1 liter)
- 1 cup corn (fresh, frozen, or canned, drained)
- 1 can (15 oz or 425 g) black beans, rinsed and drained
- 1/4 cup fresh cilantro, chopped (plus extra for garnish)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon olive oil (for cooking)
Instructions
- Start by prepping your ingredients. Shred the cooked chicken into bite-sized pieces. Dice the jalapenos, onion, and mince the garlic.
- If you haven’t cooked your chicken yet, boil the chicken breasts in water or chicken broth until fully cooked, about 15-20 minutes. Once cooked, let them cool slightly before shredding.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and diced jalapenos, cooking for an additional 1-2 minutes until fragrant.
- Pour in the chicken broth. Add the ground cumin, chili powder, salt, and pepper. Stir well to combine all the ingredients. Then, add the shredded chicken, corn, and black beans to the pot.
- Allow the soup to simmer for about 10-15 minutes, stirring occasionally.
- Once heated through, remove from heat. Stir in the freshly squeezed lime juice and chopped cilantro. Adjust seasoning if needed, then serve garnished with extra cilantro and lime wedges.

- For a milder flavor, remove the seeds from the jalapenos.
