Ingredients

  • 8 oz pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, diced
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine pasta, cherry tomatoes, cucumber, bell pepper, black olives, red onion, and mozzarella cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
