Italian meatball soup is a hearty and flavorful dish that combines tender meatballs, vegetables, and broth.

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 6 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup spinach, chopped
- Fresh basil for garnish
Instructions
- In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper.
- Form mixture into small meatballs.
- In a large pot, heat chicken broth over medium heat.
- Add diced tomatoes, carrots, and celery to the pot.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Carefully add meatballs to the pot.
- Cook for an additional 15-20 minutes until meatballs are cooked through.
- Stir in chopped spinach and cook for 2 more minutes.
- Serve hot and garnish with fresh basil.
Notes
- Adjust seasoning to your taste.
- You can use turkey or chicken for the meatballs.
- Store leftovers in the refrigerator for up to 3 days.
