Italian meatball soup is a hearty and flavorful dish that combines tender meatballs, vegetables, and broth.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 6 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup spinach, chopped
  • Fresh basil for garnish

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper.
  2. Form mixture into small meatballs.
  3. In a large pot, heat chicken broth over medium heat.
  4. Add diced tomatoes, carrots, and celery to the pot.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Carefully add meatballs to the pot.
  7. Cook for an additional 15-20 minutes until meatballs are cooked through.
  8. Stir in chopped spinach and cook for 2 more minutes.
  9. Serve hot and garnish with fresh basil.
