Instructions
- Cook the rice noodles according to package instructions.
- In a large pan, heat olive oil over medium heat.
- Add garlic and onion, sauté until fragrant.
- Add bell pepper and cherry tomatoes, cook until softened.
- Pour in red wine and let it reduce slightly.
- Add cooked noodles to the pan, tossing to combine.
- Season with basil, salt, and pepper.
- Serve hot, garnished with fresh basil.
