A delicious Italian chicken panini filled with grilled chicken, fresh vegetables, and tangy sauces.
Ingredients

- 2 slices of ciabatta bread
- 1 grilled chicken breast, sliced
- 1/4 cup roasted red peppers
- 1/4 cup fresh basil leaves
- 2 slices of mozzarella cheese
- 1 tablespoon pesto sauce
- Salt and pepper to taste
Instructions
- Preheat your panini press or grill.
- Spread pesto sauce on one side of each slice of bread.
- Layer sliced chicken, roasted red peppers, basil, and mozzarella on one slice.
- Season with salt and pepper.
- Top with the second slice of bread, pesto side down.
- Grill in the panini press for about 5 minutes, until bread is golden and cheese melts.
- Remove from heat and let cool for a minute before slicing.
Notes
- Serve with a side salad or chips.
- Use leftover grilled chicken for quick preparation.
