Description
A traditional Irish boiled dinner featuring corned beef and vegetables.
Ingredients
Scale
- 3–4 pounds corned beef brisket
- 10 cups water
- 1 head of cabbage, cut into wedges
- 4 large carrots, peeled and cut into chunks
- 4 large potatoes, peeled and quartered
- 2 tablespoons mustard
- 1 tablespoon black peppercorns
- 2 bay leaves
Instructions
- Place corned beef in a large pot and cover with water.
- Add peppercorns and bay leaves.
- Bring to a boil, then reduce heat to simmer.
- Cook for 2.5 to 3 hours until tender.
- Add potatoes and carrots to the pot.
- Cook for 15 minutes, then add cabbage.
- Cook for an additional 10-15 minutes until vegetables are tender.
- Remove from heat and let rest before slicing.
Notes
- Serve with mustard on the side.
- Leftovers can be used in sandwiches.
