Description
A quick and delicious meal combining the bold flavors of buffalo chicken with the fun and versatility of tacos, perfect for busy weeknights or casual gatherings.
Ingredients
Scale
- 2 chicken breasts (approximately 1 lb or 450 g)
- 1 cup buffalo sauce
- 1 packet taco seasoning (about 1 oz or 28 g)
- 8 small tortillas (corn or flour)
- 2 cups shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- Salt and pepper to taste
- 1 tablespoon olive oil (optional, for sautéing)
Instructions
- Season the chicken breasts with salt and pepper. Optionally, heat olive oil in the Instant Pot and sear the chicken for 2-3 minutes on each side.
- Pour buffalo sauce over the chicken and sprinkle taco seasoning on top, ensuring the chicken is well-coated.
- Close the lid of the Instant Pot, set the vent to sealing, and cook on manual or pressure cook for 10 minutes. Allow for a natural pressure release for 5 minutes before releasing any remaining pressure.
- Shred the chicken in the pot using two forks and mix with the buffalo sauce.
- Warm the tortillas, then assemble the tacos with the buffalo chicken mixture and top with lettuce, tomatoes, cheese, and sour cream.
Notes
- For a vegetarian option, substitute chicken with cauliflower or chickpeas.
- Adjust the spice level by mixing buffalo sauce with ranch dressing or sour cream for a milder flavor.
- Experiment with different sauces like BBQ, honey mustard, or chipotle for unique flavors.
