Description

Ingredients

  • 500g pumpkin, diced
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 cup coconut milk
  • 2 tablespoons oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add onion and sauté until golden brown.
  4. Stir in garlic and ginger, cook for 1 minute.
  5. Add tomatoes and cook until soft.
  6. Add pumpkin, turmeric, coriander powder, and salt.
  7. Pour in coconut milk and mix well.
  8. Cover and simmer until pumpkin is tender.
  9. Stir in garam masala.
  10. Garnish with fresh cilantro before serving.
