Description
A warm potato salad with honey mustard dressing.
Ingredients

- 2 pounds baby potatoes
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, sliced
- 1/4 cup fresh parsley, chopped
Instructions
- Wash and halve the baby potatoes.
- Boil the potatoes in salted water until tender, about 15 minutes.
- In a bowl, mix honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper.
- Drain the potatoes and return them to the pot.
- Pour the honey mustard dressing over the warm potatoes.
- Add sliced green onions and parsley, and toss gently.
- Serve warm.
Notes
- Use fresh herbs for better flavor.
- Adjust sweetness by modifying honey quantity.
- Best served immediately.
