Description

A warm potato salad with honey mustard dressing.


Ingredients

Scale
  • 2 pounds baby potatoes
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Wash and halve the baby potatoes.
  2. Boil the potatoes in salted water until tender, about 15 minutes.
  3. In a bowl, mix honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper.
  4. Drain the potatoes and return them to the pot.
  5. Pour the honey mustard dressing over the warm potatoes.
  6. Add sliced green onions and parsley, and toss gently.
  7. Serve warm.
