A fresh and tangy salad featuring Brussels sprouts and a honey mustard dressing.
Ingredients

- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1/4 cup apple cider vinegar
- 1/2 cup walnuts, chopped
- 1/2 cup dried cranberries
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the Brussels sprouts with olive oil, salt, and pepper.
- Spread them on a baking sheet and roast for 20-25 minutes until golden.
- In a bowl, whisk together honey, Dijon mustard, and apple cider vinegar.
- Once the Brussels sprouts are done, let them cool slightly.
- In a large bowl, combine the roasted Brussels sprouts, walnuts, and cranberries.
- Drizzle the honey mustard dressing over the salad and toss to coat.
- Serve immediately or chill in the refrigerator for later.
