Ingredients

  • 1/2 cup walnuts, chopped

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the Brussels sprouts with olive oil, salt, and pepper.
  3. Spread them on a baking sheet and roast for 20-25 minutes until golden.
  4. In a bowl, whisk together honey, Dijon mustard, and apple cider vinegar.
  5. Once the Brussels sprouts are done, let them cool slightly.
  6. In a large bowl, combine the roasted Brussels sprouts, walnuts, and cranberries.
  7. Drizzle the honey mustard dressing over the salad and toss to coat.
  8. Serve immediately or chill in the refrigerator for later.
