- 1 tablespoon lemon juice
- 1/2 cup unsalted butter, melted

- Cayenne pepper, to taste
Instructions
- In a heatproof bowl, whisk together egg yolks and lemon juice.
- Place the bowl over simmering water (double boiler) and whisk constantly.
- Slowly drizzle in the melted butter while whisking.
- Continue to whisk until the sauce thickens.
- Season with salt and cayenne pepper to taste.
