- 4 cups cornbread, crumbled
- 1 cup onion, chopped
- 1 cup celery, chopped
- 1/2 cup unsalted butter
- 2 cups chicken broth
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
Instructions
- Preheat oven to 375°F (190°C).
- Melt butter in a skillet over medium heat.
- Add onion and celery, sauté until soft.
- In a large bowl, combine cornbread, sautéed vegetables, herbs, salt, and pepper.
- Stir in chicken broth and beaten eggs until well mixed.
- Grease a muffin tin and fill each cup with the mixture.
- Bake for 20-25 minutes until golden brown.
- Let cool slightly before serving.
Notes
- Use homemade or store-bought cornbread.
- Add dried cranberries or nuts for extra flavor.
- Store leftovers in an airtight container.
