Description

Hobo casserole is a hearty one-pot meal that combines meat, vegetables, and potatoes.


Ingredients

  • 1 pound ground beef
  • 1 can (15 ounces) green beans, drained
  • 1 can (15 ounces) corn, drained
  • 4 medium potatoes, sliced
  • 1 onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 ounces) cream of mushroom soup
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat.
  3. Add the chopped onion and cook until softened.
  4. In a large baking dish, layer the sliced potatoes, meat mixture, green beans, corn, and cream of mushroom soup.
  5. Season with salt and pepper.
  6. Cover with aluminum foil and bake for 1 hour.
  7. Remove foil, sprinkle shredded cheese on top, and bake for an additional 15 minutes until cheese is melted.
