Hobo casserole is a hearty one-pot meal that combines meat, vegetables, and potatoes.
Ingredients

- 1 pound ground beef
- 1 can (15 ounces) green beans, drained
- 1 can (15 ounces) corn, drained
- 4 medium potatoes, sliced
- 1 onion, chopped
- 2 cups shredded cheddar cheese
- 1 can (10.5 ounces) cream of mushroom soup
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat.
- Add the chopped onion and cook until softened.
- In a large baking dish, layer the sliced potatoes, meat mixture, green beans, corn, and cream of mushroom soup.
- Season with salt and pepper.
- Cover with aluminum foil and bake for 1 hour.
- Remove foil, sprinkle shredded cheese on top, and bake for an additional 15 minutes until cheese is melted.
Notes
- Feel free to add other vegetables as desired.
- Use ground turkey for a lighter option.
- This dish can be prepared in advance and baked later.
