Easy hobo casserole with ground beef.
Ingredients

- 1 lb ground beef
- 2 cups diced potatoes
- 1 cup chopped onions
- 1 cup frozen mixed vegetables
- 1 can cream of mushroom soup
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, brown the ground beef and onions.
- Add in the diced potatoes and mixed vegetables.
- Stir in the cream of mushroom soup.
- Season with salt and pepper.
- Transfer mixture to a baking dish.
- Top with shredded cheese.
- Bake for 45 minutes until potatoes are tender.
Notes
- Use fresh or frozen vegetables.
- Adjust seasoning to your preference.
- Can substitute ground beef with turkey.
