Description

Ingredients

- 2 cups white beans, soaked and drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 carrot, diced
- 2 celery stalks, diced
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrot, and celery. Sauté until softened.
- Add garlic and thyme. Cook for 1 minute.
- Add soaked white beans and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 30-40 minutes until beans are tender.
- Season with salt and pepper.
- Blend soup if desired for a creamy texture.
- Serve hot.
