Description

A hearty and nutritious lasagna soup packed with protein.


Ingredients

  • 1 lb ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 8 oz lasagna noodles, broken
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground turkey over medium heat.
  2. Add the onion and garlic, sauté until softened.
  3. Stir in the crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  4. Bring the mixture to a boil.
  5. Add the broken lasagna noodles and cook until tender.
  6. Stir in the spinach and cook until wilted.
  7. Serve hot, topped with ricotta, mozzarella, and Parmesan cheese.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • Can substitute ground beef or chicken if desired.
  • Add more vegetables like zucchini or bell peppers for extra nutrition.
