Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 lemon, quartered
  • 4 garlic cloves, crushed

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels.
  3. Rub olive oil all over the chicken.
  4. Season the chicken with salt, pepper, garlic powder, thyme, and rosemary.
  5. Stuff the cavity with lemon quarters and crushed garlic.
  6. Place the chicken in a roasting pan.
  7. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Let it rest for 10 minutes before carving.
