Ingredients

- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- 1 lemon, quartered
- 4 garlic cloves, crushed
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- Rub olive oil all over the chicken.
- Season the chicken with salt, pepper, garlic powder, thyme, and rosemary.
- Stuff the cavity with lemon quarters and crushed garlic.
- Place the chicken in a roasting pan.
- Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10 minutes before carving.

- Use fresh herbs for more flavor.
- Serve with roasted vegetables for a complete meal.
- Store leftovers in the fridge for up to 3 days.
