Instructions
- Preheat your oven to 400°F (200°C).
- Season the rack of lamb with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear the lamb for 2-3 minutes on each side until browned.
- In a bowl, mix breadcrumbs, garlic, rosemary, and thyme.
- Press the herb mixture onto the lamb to coat it.
- Place the lamb in the oven and roast for 20-25 minutes.
- Let it rest for 5 minutes before slicing.
