Description

Deliciously creamy and tangy raspberry cheesecake bars with a graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press mixture into a greased 9×9 inch baking pan.
  3. In another bowl, beat cream cheese and sugar until smooth.
  4. Add eggs and vanilla, mixing until just combined.
  5. Gently fold in fresh raspberries.
  6. Pour cheesecake mixture over crust in the baking pan.
  7. Bake for 30-35 minutes or until set.
  8. Allow to cool, then refrigerate for at least 2 hours before serving.
