- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press mixture into a greased 9×9 inch baking pan.
- In another bowl, beat cream cheese and sugar until smooth.
- Add eggs and vanilla, mixing until just combined.
- Gently fold in fresh raspberries.
- Pour cheesecake mixture over crust in the baking pan.
- Bake for 30-35 minutes or until set.
- Allow to cool, then refrigerate for at least 2 hours before serving.
Notes
- Use fresh raspberries for best flavor.
- Store leftovers in the refrigerator.
- These bars freeze well for up to a month.
