Description

A hearty vegan lentil mushroom stew packed with flavor and nutrition.


Ingredients

  • 1 cup green lentils
  • 2 cups mushrooms, sliced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and set aside.
  2. In a large pot, sauté onion, carrots, and celery until softened.
  3. Add garlic and mushrooms, cooking until mushrooms are tender.
  4. Stir in lentils, broth, diced tomatoes, thyme, and rosemary.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  6. Season with salt and pepper to taste.
