Ingredients

- 1 lb ground turkey
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup cooked brown rice
- 1 can black beans, rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1 cup shredded lettuce
- 1/2 cup salsa
- 1/4 cup cilantro, chopped
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, sauté until soft.
- Add ground turkey and cook until browned.
- Stir in taco seasoning and cook according to package instructions.
- In a bowl, layer cooked brown rice, turkey mixture, black beans, corn, and tomatoes.
- Top with avocado, lettuce, salsa, and cilantro.
