Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup cooked brown rice
  • 1 can black beans, rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1/2 cup salsa
  • 1/4 cup cilantro, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add ground turkey and cook until browned.
  4. Stir in taco seasoning and cook according to package instructions.
  5. In a bowl, layer cooked brown rice, turkey mixture, black beans, corn, and tomatoes.
  6. Top with avocado, lettuce, salsa, and cilantro.
