A nutritious and flavorful salad featuring lentils, vegetables, and a Mediterranean dressing.
Ingredients

- 1 cup lentils, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, chopped
- 1/4 cup parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a pot, combine lentils and water. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes until lentils are tender.
- Drain lentils and let them cool.
- In a large bowl, combine lentils, cucumber, bell pepper, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill before serving.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Feel free to add feta cheese for extra flavor.
