Description
Healthy halibut with a classic beurre blanc sauce.
Ingredients

- 2 halibut fillets (6 ounces each)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup white wine
- 1/4 cup heavy cream
- 1/2 cup unsalted butter, cubed
- 1 shallot, finely chopped
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Season halibut fillets with salt and pepper.
- Heat olive oil in a pan over medium heat.
- Cook halibut for 4-5 minutes on each side until cooked through.
- Remove halibut and keep warm.
- In the same pan, add shallots and sauté until translucent.
- Add white wine and reduce by half.
- Stir in heavy cream and simmer for 2 minutes.
- Whisk in butter until melted and smooth.
- Add lemon juice and season to taste.
- Serve halibut topped with beurre blanc and garnish with parsley.
