Description
A lighter version of classic chicken alfredo using cauliflower sauce.
Ingredients

- 1 pound chicken breast, diced
- 1 head of cauliflower, chopped
- 2 cups chicken broth
- 1 cup milk
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 8 ounces fettuccine pasta
Instructions
- Cook fettuccine according to package instructions.
- In a pot, steam cauliflower until tender.
- In a blender, combine steamed cauliflower, chicken broth, milk, and garlic. Blend until smooth.
- In a skillet, cook diced chicken until browned.
- Add cauliflower sauce to the skillet and stir well.
- Combine chicken mixture with cooked pasta.
- Stir in Parmesan cheese, salt, and pepper.
- Serve hot.
Notes
- For a vegan version, substitute chicken with mushrooms and use plant-based milk.
- Adjust seasoning as desired.
- Top with fresh herbs for garnish.
