Description

A lighter version of classic chicken alfredo using cauliflower sauce.


Ingredients

Scale
  • 1 pound chicken breast, diced
  • 1 head of cauliflower, chopped
  • 2 cups chicken broth
  • 1 cup milk
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 8 ounces fettuccine pasta

Instructions

  1. Cook fettuccine according to package instructions.
  2. In a pot, steam cauliflower until tender.
  3. In a blender, combine steamed cauliflower, chicken broth, milk, and garlic. Blend until smooth.
  4. In a skillet, cook diced chicken until browned.
  5. Add cauliflower sauce to the skillet and stir well.
  6. Combine chicken mixture with cooked pasta.
  7. Stir in Parmesan cheese, salt, and pepper.
  8. Serve hot.

Notes

  • For a vegan version, substitute chicken with mushrooms and use plant-based milk.
  • Adjust seasoning as desired.
  • Top with fresh herbs for garnish.
