Healthy carrot muffins that are moist and delicious.
Ingredients

- 1 cup grated carrots
- 1 cup whole wheat flour
- 1/2 cup oats
- 1/2 cup honey or maple syrup
- 1/2 cup applesauce
- 1/4 cup vegetable oil
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix grated carrots, honey, applesauce, and oil.
- Add eggs and mix well.
- In another bowl, combine flour, oats, baking powder, baking soda, salt, and cinnamon.
- Slowly add dry ingredients to wet ingredients and mix until just combined.
- Fold in walnuts if using.
- Pour batter into muffin tin lined with paper liners.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store muffins in an airtight container.
- These muffins freeze well.
- Feel free to add dried fruits or seeds.
