Description

Healthy carrot muffins that are moist and delicious.


Ingredients

  • 1 cup grated carrots
  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup applesauce
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix grated carrots, honey, applesauce, and oil.
  3. Add eggs and mix well.
  4. In another bowl, combine flour, oats, baking powder, baking soda, salt, and cinnamon.
  5. Slowly add dry ingredients to wet ingredients and mix until just combined.
  6. Fold in walnuts if using.
  7. Pour batter into muffin tin lined with paper liners.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool before serving.

Notes

  • Store muffins in an airtight container.
