- 3 cups cooked rice
- 1 cup diced pineapple
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large pan over medium heat.
- Add mixed vegetables and sauté until tender.
- Push vegetables to the side and pour in beaten eggs. Scramble until fully cooked.
- Add cooked rice and diced pineapple to the pan.
- Pour in soy sauce and mix well.
- Stir in chopped green onions and season with salt and pepper.
- Cook for an additional 2-3 minutes until heated through.
