Description

The Harvest Grain Bowl is a delightful and nutritious dish that combines wholesome grains, vibrant vegetables, and healthy fats, making it a perfect meal for any time of the year.


Ingredients

  • Quinoa: 1 cup (uncooked)
  • Farro: 1 cup (uncooked)
  • Sweet potatoes: 2 medium (peeled and diced)
  • Kale: 2 cups (stems removed and chopped)
  • Chickpeas: 1 can (15 oz, drained and rinsed)
  • Avocado: 1 large (sliced)
  • Pumpkin seeds: 1/4 cup
  • Olive oil: 3 tablespoons (divided)
  • Lemon juice: 2 tablespoons
  • Salt and pepper: to taste

Instructions

  1. Prepare the grains by rinsing quinoa and farro under cold water. Combine quinoa with 2 cups of water and farro with 3 cups of water in separate pots. Bring to a boil, then reduce heat and simmer until cooked.
  2. Preheat the oven to 425°F (220°C) and roast the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper for 25-30 minutes.
  3. In a large bowl, combine the cooked quinoa, farro, roasted sweet potatoes, and chickpeas.
  4. Sauté the chopped kale in 1 tablespoon of olive oil for 3-5 minutes until wilted, then add to the bowl.
  5. Drizzle the mixture with 2 tablespoons of lemon juice and 1 tablespoon of olive oil, then gently toss to combine.
