Ingredients

  • 1 cup popcorn kernels
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Pop the popcorn kernels using an air popper.
  2. In a saucepan, combine sugar, butter, corn syrup, and salt. Cook over medium heat until boiling.
  3. Continue to boil for 4-5 minutes without stirring.
  4. Remove from heat and stir in baking soda and vanilla extract.
  5. Pour the caramel mixture over the popped popcorn and stir to coat evenly.
  6. Spread the coated popcorn on a baking sheet lined with parchment paper.
  7. Bake in a preheated oven at 250°F for 1 hour, stirring every 15 minutes.
  8. Let cool before serving.
