Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic; sauté until softened.
  3. Add ground turkey; cook until browned.
  4. Add bell pepper, black beans, corn, taco seasoning, and diced tomatoes; stir well.
  5. Simmer for 10 minutes.
  6. Top with shredded cheese; cover until melted.
  7. Season with salt and pepper to taste.
