- 1 pound ground chicken
- 8 ounces penne pasta
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons fajita seasoning
- 1 can diced tomatoes (14.5 ounces)
- 1 cup chicken broth
- 1 cup shredded cheese
- 2 tablespoons olive oil
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the ground chicken, cooking until browned.
- Add the onions and bell peppers. Cook until softened.
- Stir in garlic and fajita seasoning. Cook for 1 minute.
- Add diced tomatoes and chicken broth. Bring to a simmer.
- Mix in the cooked pasta and cheese. Stir until cheese melts.
- Serve hot.

- Use whole wheat pasta for a healthier option.
