Delicious mini cheesecakes inspired by the Grinch.
Ingredients

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 cup whipped cream
- 1/2 cup green food coloring
- 1 package graham cracker crumbs
- 1/4 cup melted butter
- 1/4 cup powdered sugar
- Red candy hearts for decoration
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter.
- Press the mixture into muffin tins to form crusts.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add whipped cream and food coloring, mix until combined.
- Pour the cheesecake mixture over the crusts.
- Bake for 20 minutes, then let cool.
- Chill in the refrigerator for at least 2 hours.
- Top with red candy hearts before serving.
Notes
- Use a cupcake liner for easy removal.
- Adjust food coloring for desired shade of green.
- Store leftovers in the refrigerator.
