- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil

- 4 cups cooked rice
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1/2 cup sour cream
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix shrimp with olive oil, paprika, salt, and pepper.
- Skewer the shrimp and grill for 2-3 minutes on each side.
- In a separate bowl, combine sour cream, garlic, and lemon juice to make the sauce.
- Assemble the bowl with rice, grilled shrimp, cherry tomatoes, avocado, and drizzle with sauce.
- Garnish with chopped cilantro.
