A refreshing summer salad featuring grilled peaches, creamy burrata cheese, and peppery arugula, drizzled with balsamic reduction.
Ingredients

- 2 ripe peaches
- 8 oz burrata cheese
- 2 cups fresh arugula or mixed greens
- 1/4 cup fresh basil leaves
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup balsamic reduction
- Optional: crushed nuts (pistachios or walnuts)
Instructions
- Wash the peaches and cut them in half, removing the pit.
- Brush the cut sides of the peaches with olive oil and sprinkle with salt and pepper.
- Preheat the grill to medium-high heat and grill the peaches cut side down for 4-5 minutes until grill marks appear.
- Spread the arugula or mixed greens on a large serving platter.
- Tear the burrata into pieces and place it on top of the greens.
- Drizzle the balsamic reduction over the salad and add optional crushed nuts if desired.
- Serve immediately while the peaches are warm and the burrata is creamy.
