Description

A refreshing summer salad featuring grilled peaches, creamy burrata cheese, and peppery arugula, drizzled with balsamic reduction.


Ingredients

  • 2 ripe peaches
  • 8 oz burrata cheese
  • 2 cups fresh arugula or mixed greens
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup balsamic reduction
  • Optional: crushed nuts (pistachios or walnuts)

Instructions

  1. Wash the peaches and cut them in half, removing the pit.
  2. Brush the cut sides of the peaches with olive oil and sprinkle with salt and pepper.
  3. Preheat the grill to medium-high heat and grill the peaches cut side down for 4-5 minutes until grill marks appear.
  4. Spread the arugula or mixed greens on a large serving platter.
  5. Tear the burrata into pieces and place it on top of the greens.
  6. Drizzle the balsamic reduction over the salad and add optional crushed nuts if desired.
  7. Serve immediately while the peaches are warm and the burrata is creamy.
