- 2 ripe peaches
- 1/4 cup honey (about 85 g)
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh thyme sprigs (for garnish, optional)
Instructions
- Marinate the chicken by whisking together honey, olive oil, balsamic vinegar, minced garlic, dried thyme, salt, and black pepper. Coat the chicken and refrigerate for at least 30 minutes.
- Prepare the peaches by washing, halving, and removing the pits.
- Preheat the grill to medium-high heat (375°F to 400°F or 190°C to 200°C). Grill the chicken for 6-7 minutes on each side until it reaches an internal temperature of 165°F (75°C).
- Brush the chicken with remaining marinade during the last few minutes of grilling.
- Let the chicken rest for a few minutes before serving with grilled peaches and a drizzle of honey glaze.
