A delicious and easy meal featuring juicy chicken thighs marinated in a zesty lemon and herb mixture, perfect for grilling.

- 4 chicken thighs, bone-in and skin-on
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tablespoons lemon zest (from about 2 lemons)
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
- 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)
- 1 tablespoon honey
- Salt and pepper to taste
- Fresh lemon wedges and herb sprigs for garnish
Instructions
- Prepare the marinade by whisking together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, honey, salt, and pepper in a mixing bowl.
- Place chicken thighs in a resealable bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 1 hour, preferably up to 8 hours.
- Preheat the grill to medium-high heat (375°F to 400°F or 190°C to 200°C) and lightly oil the grates.
- Remove chicken from the marinade and grill skin-side down for 6-7 minutes until crispy. Flip and reduce heat to medium, grilling for an additional 6-8 minutes until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before serving. Garnish with lemon wedges and herb sprigs.
Notes
- Choose plump, bone-in, skin-on chicken thighs for juiciness.
- Marinate for at least 1 hour, but up to 8 hours for best flavor.
- Use a meat thermometer to ensure chicken is cooked to 165°F (75°C).
- Can substitute chicken breasts, but adjust cooking time to prevent drying out.
