Description

Grilled Halloumi and Veggie Skewers are a delightful dish that combines the rich flavors of halloumi cheese with fresh, colorful vegetables, perfect for any occasion.

Ingredients

  • Bell peppers: 2 each of red, yellow, and green, cut into bite-sized pieces.
  • Zucchini: 2 medium, sliced into thick rounds.
  • Halloumi cheese: 400 grams, cut into cubes.
  • Olive oil: 4 tablespoons.
  • Fresh lemon juice: 2 tablespoons.
  • Garlic: 2 cloves, minced.
  • Dried oregano: 1 teaspoon.
  • Salt: to taste.
  • Black pepper: to taste.
  • Fresh herbs: such as parsley or basil, for garnish.

Instructions

  1. Gather all your ingredients and wash the bell peppers and zucchini thoroughly.
  2. Cut the bell peppers into bite-sized pieces and slice the zucchini into thick rounds.
  3. Cut the halloumi cheese into cubes, ensuring they are similar in size to the vegetables.
  4. If using wooden skewers, soak them in water for about 30 minutes.
  5. Thread the ingredients onto the skewers, alternating between bell peppers, zucchini, and halloumi cheese.
  6. In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper to create the marinade.
  7. Pour half of the marinade over the assembled skewers and let them sit for at least 30 minutes at room temperature.
  8. Preheat your grill to medium-high heat and grill the skewers for about 10-15 minutes, turning occasionally.
  9. Remove the skewers from the grill and let them rest for a few minutes before serving.
  10. Garnish with fresh herbs and serve warm.

Notes

  • Choose firm halloumi for the best texture.
  • Feel free to experiment with different vegetables.
  • Adjust the salt in the marinade based on the saltiness of the halloumi.
  • For a vegan option, substitute halloumi with firm tofu or tempeh.
