Description

Grilled Corn Avocado Salad is a vibrant dish that combines the sweetness of grilled corn with the creamy richness of ripe avocados, fresh vegetables, and a zesty lime dressing.

Ingredients

Scale
  • 4 ears of corn
  • 2 ripe avocados
  • 1/2 cup red onion
  • 1/2 cup fresh cilantro
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey (optional)
  • Salt and pepper
  • Lime wedges (optional)

Instructions

  1. Husk the corn, removing the outer leaves and silk.
  2. Preheat the grill to medium-high heat and grill the corn for 10-15 minutes, turning occasionally.
  3. Finely chop the red onion, dice the avocados, and chop the cilantro.
  4. Cut the grilled corn kernels off the cob and add them to a large mixing bowl along with the avocados, red onion, and cilantro.
  5. In a small bowl, whisk together lime juice, olive oil, honey (if using), salt, and pepper, then drizzle over the salad and toss gently.

Notes

  • Choose fresh ingredients for the best flavor.
  • Grill the corn until charred for a smoky flavor.
  • Be gentle when mixing to avoid mashing the avocados.
  • Chill the salad before serving for enhanced flavor.
  • Experiment with add-ins like cherry tomatoes or grilled chicken.
