Ingredients

- 2 cups cooked quinoa
- 2 grilled chicken fillet, sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 avocado, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- Grill chicken fillet until cooked through.
- Slice the grilled chicken.
- In a large bowl, combine quinoa, cherry tomatoes, cucumber, bell pepper, and avocado.
- Add grilled chicken on top.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper.
- Top with feta cheese.
- Toss gently to combine.
