Ingredients

- 2 slices of whole grain bread
- 1 avocado, mashed
- 1 cup spinach leaves
- 1/2 cup cucumber, sliced
- 1/4 cup green onions, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 2 tablespoons Greek yogurt
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a bowl, mix Greek yogurt, lemon juice, parsley, basil, salt, and pepper.
- Spread mashed avocado on one slice of bread.
- Layer spinach, cucumber, and green onions on top of the avocado.
- Spread the herb mixture over the vegetables.
- Top with the second slice of bread.
- Cut in half and serve.
