Description

A fresh and flavorful sandwich featuring a blend of herbs and creamy dressing.


Ingredients

  • 2 slices of whole grain bread
  • 1 avocado, mashed
  • 1 cup spinach leaves
  • 1/2 cup cucumber, sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix Greek yogurt, lemon juice, parsley, basil, salt, and pepper.
  2. Spread mashed avocado on one slice of bread.
  3. Layer spinach, cucumber, and green onions on top of the avocado.
  4. Spread the herb mixture over the vegetables.
  5. Top with the second slice of bread.
  6. Cut in half and serve.
