Description
A refreshing green bean and farro picnic salad that’s perfect for outdoor gatherings.
Ingredients

- 1 cup farro
- 2 cups water
- 2 cups green beans, trimmed
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse farro under cold water.
- In a pot, combine farro and water. Bring to a boil.
- Reduce heat and simmer for 30 minutes or until tender.
- While farro cooks, blanch green beans in boiling water for 3 minutes.
- Drain green beans and place in ice water to stop cooking.
- In a large bowl, combine cooked farro, green beans, cherry tomatoes, red onion, and feta.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Chill before serving.
Notes
- This salad can be made a day ahead.
- Store leftovers in the refrigerator.
- Feel free to add other vegetables.
