Description

A refreshing green bean and farro picnic salad that’s perfect for outdoor gatherings.


Ingredients

Scale
  • 1 cup farro
  • 2 cups water
  • 2 cups green beans, trimmed
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse farro under cold water.
  2. In a pot, combine farro and water. Bring to a boil.
  3. Reduce heat and simmer for 30 minutes or until tender.
  4. While farro cooks, blanch green beans in boiling water for 3 minutes.
  5. Drain green beans and place in ice water to stop cooking.
  6. In a large bowl, combine cooked farro, green beans, cherry tomatoes, red onion, and feta.
  7. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  8. Pour dressing over salad and toss to combine.
  9. Chill before serving.

Notes

  • This salad can be made a day ahead.
  • Store leftovers in the refrigerator.
  • Feel free to add other vegetables.
