Description
A delicious dish of meatballs served in a tangy lemon sauce.
Ingredients

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup chicken broth
- Juice of 2 lemons
- 1 tablespoon cornstarch
- 1 tablespoon water
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine ground beef, breadcrumbs, Parmesan, parsley, egg, garlic, oregano, salt, and pepper.
- Form mixture into meatballs.
- Heat olive oil in a skillet over medium heat. Brown meatballs on all sides.
- Transfer meatballs to a baking dish.
- In the same skillet, add chicken broth and lemon juice. Bring to a simmer.
- Mix cornstarch with water and stir into the sauce. Cook until thickened.
- Pour sauce over meatballs in the baking dish.
- Bake for 20 minutes or until meatballs are cooked through.
Notes
- Serve with rice or pasta.
- Garnish with additional parsley.
- Store leftovers in the refrigerator for up to 3 days.
