Description

A delicious dish of meatballs served in a tangy lemon sauce.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • Juice of 2 lemons
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine ground beef, breadcrumbs, Parmesan, parsley, egg, garlic, oregano, salt, and pepper.
  3. Form mixture into meatballs.
  4. Heat olive oil in a skillet over medium heat. Brown meatballs on all sides.
  5. Transfer meatballs to a baking dish.
  6. In the same skillet, add chicken broth and lemon juice. Bring to a simmer.
  7. Mix cornstarch with water and stir into the sauce. Cook until thickened.
  8. Pour sauce over meatballs in the baking dish.
  9. Bake for 20 minutes or until meatballs are cooked through.

Notes

  • Serve with rice or pasta.
  • Garnish with additional parsley.
  • Store leftovers in the refrigerator for up to 3 days.
