Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add rice, stir for 2 minutes.
- Pour in vegetable broth, lemon juice, and zest.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and cover.
- Cook for 15-20 minutes until rice is tender and liquid is absorbed.
- Fluff rice with a fork, garnish with parsley, and serve.
