Description
A comforting Greek soup with chicken, lemon, and rice.
Ingredients

- 1 lb chicken fillet, diced
- 1/2 cup rice
- 1 onion, chopped
- 2 carrots, sliced
- 4 cups chicken broth
- 2 eggs
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions
- In a pot, combine chicken, onion, carrots, and broth.
- Bring to a boil and add rice.
- Simmer until chicken is cooked and rice is tender.
- In a bowl, whisk eggs and lemon juice.
- Add a bit of hot soup to the egg mixture, then stir back into the pot.
- Season with salt and pepper.
- Serve hot.
Notes
- Adjust lemon to your taste.
- Use leftover chicken for quicker preparation.
- Garnish with parsley if desired.
