Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups cauliflower rice
- 1 tablespoon fresh parsley, chopped
Instructions
- In a bowl, mix Greek yogurt, garlic, olive oil, lemon juice, oregano, salt, and pepper.
- Marinate chicken breasts in the mixture for at least 30 minutes.
- Heat a grill or skillet over medium heat and cook the chicken for 6-7 minutes on each side until fully cooked.
- In a separate pan, sauté cauliflower rice for 5-7 minutes until tender.
- Slice the cooked chicken and serve it over the cauliflower rice.
- Garnish with fresh parsley before serving.
