Ingredients

- 4 chicken breasts
- 2 cups cooked rice
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon oregano
- 1 teaspoon basil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until fragrant.
- Add chicken breasts and cook until browned on both sides.
- In a large bowl, combine cooked rice, cherry tomatoes, spinach, feta, olives, oregano, basil, salt, and pepper.
- Place the chicken in a baking dish and top with the rice mixture.
- Bake for 25-30 minutes until chicken is cooked through.
- Serve warm and enjoy.
Notes
- You can substitute quinoa for rice.
- Feel free to add more vegetables to your liking.
- This dish can be prepared a day in advance and baked before serving.
