Description

A flavorful and hearty Greek chicken casserole packed with vegetables and herbs.


Ingredients

  • 4 chicken breasts
  • 2 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions and garlic until fragrant.
  3. Add chicken breasts and cook until browned on both sides.
  4. In a large bowl, combine cooked rice, cherry tomatoes, spinach, feta, olives, oregano, basil, salt, and pepper.
  5. Place the chicken in a baking dish and top with the rice mixture.
  6. Bake for 25-30 minutes until chicken is cooked through.
  7. Serve warm and enjoy.

Notes

  • You can substitute quinoa for rice.
