Ingredients

- 1 lb chicken breast
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, sliced
- 1 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 1/2 cup tzatziki sauce
- 2 tablespoons olive oil
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season chicken with olive oil, oregano, salt, and pepper.
- Grill chicken for 6-7 minutes per side until cooked through.
- Let chicken rest, then slice it.
- In a bowl, layer quinoa, grilled chicken, tomatoes, cucumber, onion, feta, and olives.
- Top with tzatziki sauce before serving.
Notes
- Substitute quinoa with brown rice if preferred.
- Add more vegetables based on your taste.
- Make tzatziki sauce a day ahead for better flavor.
