Description
A comforting dish made with gnocchi, baked in a rich tomato sauce.
Ingredients

- 500g gnocchi
- 400g canned diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 100g mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 200°C (400°F).
- In a pan, heat olive oil and sauté the onion until translucent.
- Add garlic and cook for another minute.
- Stir in the diced tomatoes and oregano. Season with salt and pepper.
- Simmer the sauce for 10 minutes.
- Cook the gnocchi according to package instructions, then drain.
- Combine the gnocchi with the tomato sauce.
- Transfer the mixture to a baking dish and top with mozzarella cheese.
- Bake for 20 minutes or until the cheese is bubbly and golden.
Notes
- Feel free to add vegetables like spinach or bell peppers.
- Serve with fresh basil on top for added flavor.
