Ingredients

- 2 cups gluten free flour
- 1 cup mashed potatoes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Water as needed
Instructions
- In a bowl, combine mashed potatoes, gluten free flour, salt, and pepper.
- Add olive oil and mix until a dough forms.
- If the dough is too dry, add water a little at a time.
- On a floured surface, roll the dough into ropes and cut into small pieces.
- Shape each piece with a fork to create ridges.
- Boil a pot of salted water and cook gnocchi until they float.
- Remove and serve with your favorite sauce.
Notes
- Make sure potatoes are fully cooled before mashing.
- Use a gluten free flour blend for best results.
- Store any leftovers in an airtight container in the fridge.
